
Codorniu is the history of a winemaking family that goes back to the 16th century. In 1872 Josep Raventós Fatjó, pioneer of the sparkling wine industry, elaborated his first sparkling wine bottle, applying the traditional method and blended the classic Penedés varieties: Macabeo, Xarello and Parellada.
VINEYARDS AND HARVEST
The harvest at Codorníu takes places between the end of August and the end of October. After picking, the grapes are transferred to the winery. The maximum permitted yield is 1hl per 150kg of grapes. The first gentle pressing gives us the free-run juice, which once settled, then goes into the fermentation tanks.
The principle white grape varieties at Codorníu are Macabeo, Xarel·lo, Parellada and Chardonnay. For the production of our rosé cavas, and only for this purpose, we also use Pinot Noir.

DIFFERENTIAL VALUES
· One of the factors that distinguishes Codorníu from others is that our grapes come from various areas of D.O. Cava. Due to soil and climate diversity, the different grape characteristics enrich our cavas.
· Cava quality originates in the vineyard. Codorníu looks after this aspect with great care through its Quality Vineyard Management, in an effort to grow small, healthy grapes by taking advantage of limited vine vigour.
· Advanced state-of-the-art technology (Scott Henry, Smart Dyson, etc.) and precision agriculture (satellite-assisted) is employed to care for and protect the vines.
INNOVATION AND EXCELLENCE
Throughout its history Codorníu has been renowned for its ability to innovate, in response to the demand for cava of exceptional quality.
In 1985 Codorníu made its first bottle of cava incorporating the Chardonnay variety, thereby obtaining wines that were better balanced, fresher and more aromatic.
In technical matters Codorníu has also been a pioneer, with new pressing methods, improved riddling systems, etc.
In 2000, Codorniu launches the first Pinot Noir rosé cava.
